When I grease the nipples on the steering yoke, should I see grease squeezing through the bearing holders at the top and bottom?

Nope - only when the frame is full of grease
There are no seals on the bearings so grease just tends to fill the frame, a sure fire way to annoy the powder coaters is to not clean this out, makes a mess of their oven floor at the first firing.
Depending on exposure I wouldn't put in more than a couple of pumps a year.

Nope... You'll just be filling the frame with grease. The bearings should be greased up on assembly. The grease nipples serve no useful purpose. You'd be better off taking them off and putting a short screw in their place, just to keep water and dirt out.

Echo the above. I reckon my G80S is substantially overweight from the grease in the frame.
