Geoff this is an old chestnut. I suggest you use the search facility as there are many threads and many opinions.

Re: recommended engine oil
Hi,
I have a 1960 G12CSR and the workshop manual specifically for twins says SAE 50 in summer and SAE 30 in winter. But as I am on the south coast I actually use SAE 50 throughout the year. But if riding in winter conditions where temperature is less than 32f (freezing point), then these books go on to recommend SAE 20 in winter. Having said all that, I have another F. Neill manual which actually suggests for twins using SAE30 in summer and SAE20. For gearbox, use SAE 50 throughout the year. I also always change the oil every 1,000 miles.
regards
