Is this the right way up to fit. Or should the other (more) copper side be up?

Whatever way up you fit it make sure the two gaskets do not overlap between the barrels. This is the cause
of most head gaskets blowing, offer them up then if need be trim with a craft knife

I had some great advice as to the fitting of the gasket from a helpful club member at Stafford.
Soak the the composite gasket over night then remove it from the water. Then throw it away and find a copper gasket set.
Seems to have worked as I went and found a copper gasket

Just make sure the copper thickness is right. I had one from club spares which was the wrong thickness and I did not realise. I had to grind a bit off the top of one of the valves to get clearance.
