Oh, that's an easy one!!
Actually not, as there will be almost as many opinions as bikes out there but...
For simplicity, you can use SAE 50 in engine and gearbox, and don't forget your chaincase too, which can take the same.
Some might suggest you use any cheap SAE 10/30 mix in the chaincase, but its your choice if you want to buy two different oils.
Let everything warm up before setting off at speed, and do check there's oil returning to the tank before you do.
And now I open the floor to the many well considered and nuanced alternatives!

You can't go far wrong by referring to page 12 ('Lubrication') in the Owners Manual linked below, then use the 'Search' facility to read the dozens of threads with a multitude of opinions and experiences about which oil to use.

Thank you for your feedback. I'm glad, I still have a few bottles of Castrol Classic SAE 50 Engine oil, which I also use for my Panther M100 1956.

Hello Robert,
Just a comment about the oil in the primary chaincase: according to my experience on an M30 I had problems with hardly stuck clutch. On the G12CSR I used ATF, but there were leaks. I think the solution is the SAE 20. Do not pour too much oil: the bottom of the chain should only be in contact.
